London’s ‘oldest restaurant’. Rules is owned by the Mayhews, a family that also owns Lartington Estate grouse moor in County Durham, a modestly sized but intensively managed moor set (according to a supporter) “amongst some large and very heavy-duty neighbours”. The restaurant sends its staff on ‘training’ holidays to the estate to learn how to shoot and prepare ‘game’ for its ‘clientele’, and provides a gallery of smiling folk holding up dead birds etc…
